To produce this vintage, manual harvests are carried out in successive selections from mid-November until the first days of December.

The slow pressing lasts several hours. Fermentation takes place in oak barrels for several weeks.

The Petit Manseng harvested at the extreme of over-ripeness offers a complex palette of candied citrus fruits, honey, medlar and dried apricot. The palate reflects this intensity, balanced between the caress of the liqueur and an incomparable freshness that gives this wine an exceptional length.

Perfect pairing with smoked salmon, foie gras, farmhouse cheeses from the Pyrenees, and Roquefort.
